Chorizo hash



Ingredients

Serves 2


2 tsp extra virgin olive oil

100g cooking chorizo, diced

1 large sweet potato, diced and cooked

1 roasted red pepper, diced

50g spinach

1 tbsp fresh coriander, chopped

Salt and pepper


Method

1. Heat the oil in a large frying pan over a low heat and then add the chorizo.

2. Cook the chorizo for 3-5 minutes and then add the cooked sweet potato.

3. Stir well and cook for a further 5 minutes before adding the roasted red pepper.

4. Add the coriander and spinach and cook until the spinach has fully wilted.

5. Add salt and pepper to taste.


Serve with a poached egg and diced avocado.
