Tuna & soya bean salad


Serves 2

200g frozen soya beans

2 spring onions, thinly sliced

1 can of tuna

1 handful of fresh coriander

12 olives

10 cherry tomatoes, sliced

2 tbsp apple cider vinegar

2 tbsp extra virgin olive oil

Salt and pepper to taste

2 large handfuls of mixed leaves / rocket


1 Cook the soya beans in salted boiling water for 6-7 minutes and then drain.

2 Place the spring onions, tuna, coriander, olives, tomatoes, and soya beans into a large bowl and using a fork, break the tuna into flakes.

3 Drizzle the vinegar and olive oil over then salad, seasoning with salt and pepper. Toss well.

4 Fold in the mixed leaves before serving.
