Chicken burrito bowl


Serves 2

200g cooked chicken

4 garlic cloves, peeled and squashed

1/2 tsp Dijon mustard

1 tbsp fresh parsley

2 tbsps balsamic vinegar

4 tbsp extra virgin olive oil

1 head of broccoli, finely chopped

1/2 red onion, finely diced

1/4 cucumber, diced

1 tsp smoked paprika

1/2 red pepper, diced

8-10 black pitted olives

1/2 avocado, diced


1. Put the olive oil, mustard, parsley, paprika, vinegar and garlic in a sealed container and shake vigorously to mix. Remove the garlic cloves.

2. Divide the chicken, broccoli, olives, avocado, cucumber and red onion between two serving bowls and cover with the dressing.

3. Mix thoroughly to mix in the dressing and serve.
